Also, there was a crazy fish tank with all sorts of exciting things going on.Beat: My dad tells a story that starts with: "So there's this player Erik Ryland"Variance: The story went from sad that he knew who Ryland was to hilarious when he said "His avatar is a picture of his own face, so we all started making fun of his eyebrows. He seemed kind of upset and said nobody has made fun of me about my eyebrows since high school" (I then inform him that Ryland is still in high school). Almost ALL sushi has been frozen for 10 days at some point to kill parasites. Modern fishing trawlers flash freeze their catch. Much of that catch being sold in Tokyo comes from the Atlantic, goes to Tokyo, and back here, and you never even know it. I have seen hundreds of tuna lined up for bidding in the Market - frozen solid and then hacked into with chain saws to be parted out to the best Seafood restaurants in the world. I'm saying that fish is better if it hasn't been frozen (yes, it's possible to eat legit fresh fish). Also the way it's handled definitely affects the freshness...the great tuna you're talking about is flash frozen and kept at the perfect temperature during the trip to the best restaurants in the world. Then they use it as soon as it's thawed. Tuna at a shitty chinese/japanese combo buffet may have been good when it entered the market, but it's gone through a number of trips, probably been partially thawed a few times, possibly repackaged, and has most likely been thawed days prior to consumption. That all comes into play when we're talking about the freshness of a fish. I don't just mean that sushi is only good when the fish jumps out of the water into your hands.
